Lady Grisell Baillie was in need of a pick-me-up. She had long been sat at her writing desk, working on her latest draft, and she was weary. So she put down her quill and drifted to the kitchen, in need of something that would inspire her mind and fortify her senses. In a thick- bottomed pot, she stirred sugar and cream until they started to stiffen – and made the world’s first tablet.
Evocative of its soft-rock cliffs and south-western beaches, this delicate white tea captures the moment Scotland’s iconic sweet treat was made – blending creamy vanilla with toasted brown sugar to whip up a cosy and comforting hug in a mug.
